Cocktail Weenies of Death

1 cup ketchup (I can't answer for the results if you use other than Heinz)
1 cup brown sugar slightly packed
1 cup of bourbon I use Jim Beam 3 tablespoons soy sauce
1 or 2 tablespoons Tabasco
2 pounds cocktail weenies

Put first five ingredients in a crock pot (or a large saucepan on meium low to low heat) and mix well - get the sugar dissolved. Drain package of weenies and add to crock pot or pan. Heat in sauce for around 2 hours. Stir every half an hour or so and make sure it's not bubbling too much.

Hot and Sour soup

6oz of wooden ear or Shiitake mushrooms (or both, I love mushrooms!) cut into ¼- ½ pieces.
2 cans of straw mushrooms drained.
2 table spoons vegetable oil
1 pound lean pork cut into strips.
Black pepper
Small can bamboo shoots cut into small pieces
6 ounces bean curd, (optional)
2 quarts chicken stock, can or fresh.
1/3 cup corn starch dissolved in ½ cup water
¼ cup soy sauce
¼ cup rice wine vinegar
6 eggs beaten
¾ cup chopped green onions
Chili oil to taste.

In a wok or good regular pan with deep sides add oil and cook pork for about 3-5 minutes until no longer pink in middle.
Add straw and shiitake mushrooms, bamboo shoots and bean curd.
Season with pepper. Sauté for about 5 more minutes.
Add chicken stock and bring to boil.
Reduce to simmer and cook for 5 minutes.
Add dissolved corn starch and bring back to boil and cook for 3 minutes.
Reduce heat to a simmer and add soy sauce and rice wine vinegar.
In a wide circle add eggs stirring constantly while pouring them in.
Add green onions.
Taste to check if you want to add more rice wine vinegar or soy sauce. I always add more Rice wine vinegar but that's just me.
Ladle into to bowls and have the Chili sauce at the table if you want to add more zing to your soup.

Breakfast Tater Tot Casserole

Ingredients

1 pound ground pork breakfast sausage cooked (or cubed ham or bacon, whatever you like best as long as its cooked)
2-4 cups shredded cheddar cheese
2 cups milk
4 eggs
2 pounds frozen tater tots

Preheat oven to 350 degrees F (175 degrees C).

Spread the sausage, bacon, or ham evenly in the bottom of a 9x13 inch pan. Spread cheese over meat. I use 4 cups of cheese, but you can use less if you prefer to reduce the calories.

In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point).

Top with frozen tater tots.

Cook for 45 minutes or until hot and bubbly. Let set 5 minutes then enjoy!
