If you don't like beef jerky try pemmican,
Blend a dried meat(dry in oven or dehydrator) in a blender, add any kind of dried fruit you want, blend together, spread a thin layer in a pan and pour melted lard or butter over it, and mix it in, then spread it out again. Let it cool overnight in refrigerator, in the morning cut it into pieces.

I would like to officially thank our dear Dasha for her cake balls recipe! :) They were a huge success at our family Christmas celebration. They went very quickly! My sis-in-law said she ate five of them! :lol:

Toast some sliced bread.
Soft boil the eggs.
Spread the egg over toasted bread.

Then a very light dash of salt and pepper.
If not, possibly a little dollop of mustard. :drool:
HOT SAUSAGE

1 Lbs Ground pork (fresh ground pork, with NO OTHER INGREDIENTS the more fat the better.)
1 tsp Salt
½ tsp Cumin
4 tsp Pepper
4 tsp Sage
2 tsp Cayenne pepper

Mix thoroughly shape into patties about the size of a biscuit and fry for about 5 minutes on each side.
Sounds good...with Dasha's cake balls for dessert!

For St Patricks day ... my wifes Irish Soda Bread Recipe
(lineage=> Kelley->Powers->Doherty->Dempsey->Kindellen)

1 cup raisins
1 1/2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup sugar
2 tbs butter
3/4 cup milk
1 egg
3 tsp caraway seeds (optional)

Boil raisins for 3 minutes, drain, and dust lightly with a little flour. Sift together the remaining flour, baking powder, salt, and sugar. Rub in the butter with hands. Add the milk, egg, and raisins (and caraway seeds if desired), stir to combine. Pour into a greased and floured loaf pan. Bake in a pre-heated oven 350*F for approximately 1 hour.

Havin' corned beef and cabbage tonight! Not much to it - just stick everything in a crock pot for 6 hours, and you're good :)
Breakfast Tater Tot Casserole

Ingredients

1 pound ground pork breakfast sausage cooked (or cubed ham or bacon, whatever you like best as long as its cooked)
2-4 cups shredded cheddar cheese
2 cups milk
4 eggs
2 pounds frozen tater tots

Preheat oven to 350 degrees F (175 degrees C).

Spread the sausage, bacon, or ham evenly in the bottom of a 9x13 inch pan. Spread cheese over meat. I use 4 cups of cheese, but you can use less if you prefer to reduce the calories.

In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point).

Top with frozen tater tots.

Cook for 45 minutes or until hot and bubbly. Let set 5 minutes then enjoy!

I have tons of recipes. I belong to another forum where I have a thread "Rose's Recipes" with recipes and pictures, about 150 so far. Unfortunately you have to be a member to view the forum so I can't link it here but I can post a few of the good ones when I have time. Mmmm food... :drool:
Stuffed chicken Breast

Perfect for low carb, pair this with a salad and your have a great low carb meal!

Ingredients

1 lb boneless, skinless chicken breasts
... 4 oz pepper jack cheese, shredded (you can use up to 6 oz)
1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
2 tbsp olive oil
1 tbsp breadcrumbs (I use Italian style)
Sea salt, to taste
Freshly ground black pepper, to taste
Lots of toothpicks

Directions

Preheat oven to 180 (350 degreesf ).

Flatten the chicken to 1/4-inch thickness.

In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper.

Combine the Cajun seasoning and breadcrumbs together in a small bowl.

Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. This part requires a tiny bit of skill and I typically use about 8 toothpicks in each roll to ensure none of the filling seeps out. Be sure to count how many total toothpicks were used!

Brush each chicken breast with the olive oil. Sprinkle the Cajun seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional).

Place the chicken seam-side up onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through.

Remove the toothpicks before serving. Count to make sure you have removed every last toothpick. Serve whole or slice into medallian

Mini Peach Cobbler Recipe

Preheat oven to 350˚F.
1 cup sugar
1 cup flour
... 2 tsp baking powder
a dash of salt
3/4 cup milk
1 stick of melted butter
brown sugar
cinnamon
1 can diced peaches

Put 1 tsp of melted butter into each regular size muffin tin.

Combine the first 5 ingredients by hand… sugar, flour, baking powder, salt and milk.

Put 2 tbsp of batter into each regular size muffin tin… on top of the melted butter.

Then put 1 tbsp diced peaches on top of the batter.

Sprinkle with brown sugar and then cinnamon. I do a pretty generous "sprinkle".

Bake the regular size muffin tins for 12 minutes.

Let them cool almost completely before taking out of pan.

Don't forget a dollop of vanilla ice cream...YUM!

South West Chicken Breast

ingredients:

However many chicken breasts you are going to serve
thick cut bacon (smoked flavor is best), enough for two slices per breast
paprika, garlic powder, salt, and pepper
your favorite BBQ sauce
5 cheese mexican blend

instructions:

Pre heat oven to 375f, puncture chicken breasts multiple times with a sharp knife then sprinkle a light layer of paprika and garlic powder onto the breasts, add salt and pepper to taste then hand rub the spices into the chicken getting it into the puncture holes. Grill the breasts until done (I prefer to use the George Foreman Grill, a lot juicier). While the chicken is grilling, cook bacon in a pan until almost done. You do not want the bacon to be crispy, leave it pliable so it will form to the chicken. Once the chicken is done place in a glass cooking pan or on a foil lined baking sheet, brush your favorite BBQ sauce onto both sides of the breasts, lay two slices of the bacon on top, sprinkle the cheese blend on top of the bacon then drizzle more BBQ sauce on top of everything. Cook in oven on middle rack until cheese is melted, the bacon should crisp up during this process as well. Serve hot, I prefer to make garlic cheese mashed baby red potatoes and grilled asparagus drizzled with olive oil and lemon as sides for this dish.

I took 2nd place two years in a row. And NO there weren't only 2 entries... :D It's been so cold this winter that it just hits the spot......... Chilli for a cold day.....

Ingredients:
1 1/2 lbs lean hamburger
1 1/2 lbs chorizo (bulk)
1/2 tsp chili powder
1/2 tsp cumin
1 tbsp sugar
pinch salt
pinch pepper
pinch garlic fresh or ground
1 qt diced tomatoes
1/2 cup tomato juice
1 1/2 cup tomato sauce
1 can of 15oz chili beans
2 diced peppers
1 diced onion

Method:
Cook your meats and season with salt, pepper and garlic. After meat cooked drain. Peppers and onions can be sauteed separately or cooked with the meats. Season meat with all ingredients including 1/2 tsp red pepper. Cook and adjust spices according to your own liking. After cooked top with sour cream, shredded cheese and diced onions. (I cook the onion and green pepper with meat)

In a Masterfoods competition, I earned a prize for my cajun burger dish. My wife accused me of stealing her recipe, but she would not have participated, and as a result of my efforts, we won an electric grill and a box of Masterfood items.
Bavette steak is my favourite recipe.
