Turn signals in a 2005 (and newer) Escape are entirely controlled by solid-state devices in the Smart Junction Box. The clicking sound is produced by a relay in the instrument cluster. That relay has no other electrical connections to it; it's just used to create the clicking sound.
If a bulb is burned out, the signals should flash faster. If they don't flash at all, the wiring or Smart Junction Box need to be analyzed by a Ford dealer.
