IMHO, that'd be a really big and expensive job. The seats, carpet, and dash would all need to be done. It'd look funny if just the seats were black.
I would just live with it as is and next time around get the color interior you really want.
If time, effort, and money isn't a prob for you, then I guess hitting the junkyards would work. Can't really think of a more inexpensive route than that one. You could try Craigslist and see if an owner of an Escape w/a black interior would like to switch to a tan interior. :shrug:
