YouTube is a great resource of information for performing DIY projects and repairs with several channels dedicated to our Escapes. I currently have 152k on my 05 and need to replace my struts and shocks. The front end needs to be partially disassembled to free the steering knuckle from the strut so it can be removed from the vehicle. In the rear you can swap out the shocks with the car on the ground but you have to remove the hatch trim piece and pull the side panels back to expose the top mounting bolt.
If your vehicle continues bouncing when you go over bumps and then return to a smooth surface then they are not doing their job. I've had issues on other vehicles around 36k where my steering wouldn't track right over bumps until I replaced the struts. You can also visually inspect the struts and shocks for leaking oil which is another indication they need to be replaced.
